These are so beautiful! One question — unfortunately we aren’t able to eat goat cheese, is there an acceptable substitution for that in the filling? Thanks in advance for any suggestions and thanks also for sharing the recipe for this beautiful pasta!

Thank you so much, Diane! You can substitute it with more ricotta, or mascarpone for a little sweetness, or some creamy feta if that’s available. I hope you enjoy them and happy belated Valentine’s Day!
